What's your favourite thing to make with leftovers?

Over here in the UK we make this thing called 'Bubble and Squeak'.
It's tradition on Boxing Day (day after Christmas).
You chop up all your potatoes and veg leftover from Christmas Day (has to include brussel sprouts!)
and your fry it all up in a big pan so that it goes a little crispy.
We eat it with cold leftover meats and pickles.
It's the best!

That sounds fabulous, Lisa! I do something similar with vegetables the next morning for breakfast and put some over easy eggs on top. Another favorite is to make turkey curry with leftover turkey and vegetables.

That sounds interesting Julie. I think I'll try that with the egg.

Yes to the turkey curry. We do that too :)

We don't have many leftovers with 8 of us, and even worse 5 boys! If we have enough, I love to take the leftover roast beef and add taco seasoning to it and simmer it a little with the juice. Then I roll some meat and cheese into tortillas. Sprinkle with cheese and pour enchilada sauce over the pan. 350 for 30-45 minutes. Its our favorite!
