QOTD 09 October

When did you last bake and what was it?

I baked oat & raisin cookies last night.
They are really yummy.

i love baking too :)
i made granola and 3 cheese muffins yesterday.
today i plan to make some cookies :)

I've never made granola Jessi.
How do you make your's?

Cheese muffins are a good idea.
Might make some of those for the kids lunches.

Oh my? Hmmm. While I love to bake, I haven't in forever since we have all but nearly cut out sugars from our diets. I will be baking for Thanksgiving though. Candy apple pie. It will be an annual treat for us now.

That is so funny, Lisa! I made oatmeal/buckwheat flour, raisin cookies Saturday night......added dark chocolate chips, toasted walnuts and sub vanilla with almond extract. Like Suz, we have really cut back on sugar and processed flours too and this is the first time in a very long time I've baked. However, during the holiday season, caution is thrown to the wind.

Jessi, I make granola too and give as gifts.....love all the different nuts & seeds: pecans, almonds, pumpkin seeds, flax seeds, walnuts, sunflower seeds, unsweetened coconut, etc and love the spices like cinnamon, ginger & nutmeg. Would love to hear what you put in yours. Yum, cheese muffins. Loving this thread.

lisa...
i have a really simple recipe...
we use it to top yogurt or use as cereal with milk.

the base recipe is
3.5 cups rolled oats (i used large flake, no instant or quick)
1/2 cup maple syrup
1/4 cup butter
1TBSP vanilla extract
1/2tsp cinnamon

then i add in up to 2 cups of seeds, nuts, dried fruits etc.
my kids go to a nut free school so most of the time i keep it simple
and throw in 1cup shredded coconut, 1/2 sunflower seeds, and 1/2 cup pumpkin
lots of times i just add coconut
or just do oats...if i only do oats, i up the amount to 4 cups.
use whatever you have on hand :)
we like it with almonds and pecans too...but i don't add those as often just in case the kids end up bringing it to school.

so directions...
mix oats, cinnamon, and add-ins together
heat gently maple syrup and butter until butter is melted, add vanilla
pour into oat mixture and mix
pour onto a parchment lined baking sheet and bake until golden in a 300 degree oven stirring every 10 minutes.

you can also use honey instead of maple syrup...just lessen the amount to about 1/3 a cup.

suzanne...we cut out all processed sugars but do use natural sweeteners...maple syrup and local honey. so all the baking i do, i swap out the processed sugars for one of these natural sweeteners.

I baked a German chocolate cake for DH's bday last week. Used a mix tho...does that count? :)

I made some chocolate chip cookies recently, but I'm not baking as much as I used to. I do have some ripe bananas that will find their way into some bread soon, but that's about it.

Yummy thread!
I made apple walnut muffins yesterday; I use apple sauce instead of sugar. They were particularly yummy maybe because with the snow piling deep outside it was cozy sitting in front of the fire eating muffins and drinking java!

I am not a huge baker. I love to cook but baking is not my thing.
I hate measuring but I do manage to bake on occasion.
It's been awhile though!
